Lavender is a native of the mediterranean and became widely distributed throughout southern Europe. Lavender was widely used by the ancient Egyptians, Greeks, Romans and Arabs for medicinal purposes and for scented baths and soaps. The leaves, stems and flowers are all medicinally valuable and it is making a comeback in the culinary world. Lavender has a strong and perfumed odor. Its flavour is flowery, slightly bitter and astringent Applications : in a salad, with goat cheese. Can be eaten raw, in a syrup or honey. Go nicely with lamb, pork, chicken. In ice creams, crème brûlée, puddings, peach and apricot desserts, or in a cupcake frosting. Can be sprinkled over a cake or mixed to the cake preparation.
