Native of South America, lemon verbena is an aromatic plant genus in the family Verbenaceae. Until the 18th century, it was considered a miraculous plant supposed to cure all diseases and hunt demons. Verbena is also famous as a digestive and anti-inflammatory agent and represents an excellent natural soporific. With its subtle lemon flavour, verbena exhales a revivifying perfume and is very appreciated for its soothing and relaxing effect. But verbena also seduces the gourmets when used to flavour a dish or a sherbet for instance. Applications : to use in infusion and tea but also to flavour seafood, ice cream, sherbet, hot toddy, liquors, creams, fruits salads, sauces for poultry and fish.
