Long pepper is not very well-known and yet, it is one of the first spices introduced in Europe. As black pepper, long pepper is the fruit of a wild Indian liana growing wild on the Himalaya foothills. Its flavour is warm and slightly sweet, with notes of cinnamon, green anise and liquorice It has a fruity flavour but it is less spicy than black pepper. It can be ground or grated. Contrary to other peppers, it stands long cooking process. Applications : to flavour osso buco, goat cheee, soups, fish in papillote, meats and all saucy dishes. It is perfect for desserts, grated on fruits (melon, strawberries, stewed fruits), fromage frais, chocolate cakes, lemon tart, ...etc.
