Rock candy is a type of confectionery mineral composed of relatively large sugar crystals. This candy is formed by allowing a supersaturated solution of sugar and water to crystallize. Heating the water before adding the sugar allows more sugar to dissolve thus producing larger crystals. As far as brown rock sugar is concerned, the syrup is caramelized before crystallization.
Applications : rock candy is often dissolved in tea and coffee. You can also flavour your mulled wine, hot toddy, liquor, fruit syrup.
Ingredient : white sugar.
