Liquorice is the rhizome of a bean plant, which sweet tasting rhizomes and roots are used as flavourings. It is native to south-eastern Europe and the Middle East, where it grows wild. Ancient Chinese herbalists used licorice, distilling the root’s essence and prescribing it for a wide range of conditions. Licorice is particularly well known for its use in confectionery and drinks. Liquorice's bouquet is medicinal and highly aromatic. It is sweet tasting, similar to anise, with a slightly bitter and salty aftertaste. Applications : liquorice may be used in tea and infusion or to flavour fruit juices, syrups, cakes and drinks. It is very popular in Asian food, in soups and spices blends.
