Powdered egg whites are pasteurised egg whites that have been dehydrated and ground into a powder. This powder is widely used in bakery and pastry applications (meringue, soufflé, ice cream and sorbet, curd, marzipan, icings). They have better whipping and aeration properties than fresh egg whites. Added in small quantities to fresh or frozen egg whites, this powder guarantees optimal results.
Ingredients : powdered hen's egg albumin, stabiliser E415, acidifier E330, expansion agent E1505..
Directions of use : to get a fresh egg white, mix 5g of powder with 30 g of water. Add a small quantity to your fresh egg whites.
