Powder mix for Mousseline cream. With a firm and fluffy texture, this cream is ideal to make mille-feuille, or entremets such as the Fraisier. It can also be used to fill éclairs, religieuses, fruit tartlets,...etc.
Ingredients : sugar, modified corn starch, skimmed milk powder, lactose, glucose syrup, vegetal fat, coprah oil, emulsifiers : E472b-E339-E450, milk proteins, geliants : E407, flavourings, colouring : E160a. Contain nuts.
Direction for use : Dilute 400 g of powder with 50 cL of cold mix and 50 cL of cold water. Mix until smooth cream.
