Nappage is a transparent jelly glaze for pastry. It has no flavour, you can aromatize and colour it as desired. Doesn't turn white when frozen.
Ingredients : glucose syrup, sugar, wter, stabilizers : E440 - E415, acidifying agents : E330, conservation agent : E202.
Direction for use : add 10 to 20% of water or fruit purée. Heat to obtain a shiny icing jelly, and apply with a pencil or spatula.
